I take step one of my medical boards in 6 days. SIX DAYS ahh! So no time to write much, but luckily I completed this challenge a while ago. All you need to know is…this stew is amazing.

Its different. Its delicious. Its way more than I ever expected a stew could be.

And, interesting little tid bit: my mom’s family used to get together with friends once a year in the fall and make it in a giant kettle out in the yard.

Here it is in all its glory

And that, my friends, is a positive spoon sign. When the stew is thick enough for the spoon to straight up the stew is officially done.

I used the long version of the recipe found here.

I made two changes to the recipe. I couldn’t find rabbit or fresh corn, so buffalo and frozen corn were used instead.

The 2010 April Daring Cooks challenge was hosted by Wolf of Wolf’s Den. She chose to challenge Daring Cooks to make Brunswick Stew. Wolf chose recipes for her challenge from The Lee Bros. Southern Cookbook by Matt Lee and Ted Lee, and from the Callaway, Virginia Ruritan Club.

MMMMMmm great challenge.  Now back to my books!
